Snowdonia Lamb Tagine
Snowdonia Lamb Tagine is a traditional Welsh dish that combines tender lamb with aromatic spices and sweet dried fruits. This slow-cooked stew is perfect for warming up on a cold winter's day.
Ingredients
- 1.5 lbs lamb shoulder, cut into chunks
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/2 tsp ground ginger
- 1/4 tsp cayenne pepper
- 1/2 cup dried apricots
- 1/2 cup pitted prunes
- 2 cups chicken broth
- 2 tbsp honey
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large tagine or Dutch oven, heat the olive oil over medium heat.
- Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
- Add the chopped onions to the pot and cook until softened, about 5 minutes.
- Stir in the minced garlic and spices, cooking for another 2 minutes.
- Return the lamb to the pot and add the dried fruits, chicken broth, and honey.
- Bring the mixture to a simmer, then cover and cook over low heat for 1.5 to 2 hours, or until the lamb is tender.
- Season with salt and pepper to taste before serving.
