Ingredients
- 4 eggs
- 1/2 cup diced bell peppers
- 1/4 cup chopped onions
- 1/4 cup chopped tomatoes
- 1/4 cup shredded cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a bowl, beat the eggs and season with salt and pepper.
- Heat 1 tablespoon of olive oil in a non-stick pan over medium heat.
- Add the diced bell peppers, onions, and tomatoes to the pan and sauté for 3-4 minutes.
- Remove the vegetables from the pan and set aside.
- Heat the remaining olive oil in the same pan.
- Pour the beaten eggs into the pan and swirl to spread evenly.
- Cook for 2-3 minutes until the edges start to set.
- Sprinkle the sautéed vegetables and shredded cheese over one half of the omelette.
- Using a spatula, fold the other half of the omelette over the filling.
- Cook for another 2-3 minutes until the cheese is melted and the omelette is cooked through.
- Slide the omelette onto a plate and serve hot.
