Snowy Owl Omelette

Ingredients

  • 4 eggs
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup chopped tomatoes
  • 1/4 cup shredded cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, beat the eggs and season with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a non-stick pan over medium heat.
  3. Add the diced bell peppers, onions, and tomatoes to the pan and sauté for 3-4 minutes.
  4. Remove the vegetables from the pan and set aside.
  5. Heat the remaining olive oil in the same pan.
  6. Pour the beaten eggs into the pan and swirl to spread evenly.
  7. Cook for 2-3 minutes until the edges start to set.
  8. Sprinkle the sautéed vegetables and shredded cheese over one half of the omelette.
  9. Using a spatula, fold the other half of the omelette over the filling.
  10. Cook for another 2-3 minutes until the cheese is melted and the omelette is cooked through.
  11. Slide the omelette onto a plate and serve hot.
