Soan Papdi

Soan papdi is a popular Indian sweet made during festivals and special occasions. It has a flaky and melt-in-your-mouth texture with a hint of cardamom flavor.

Ingredients

  • 2 cups gram flour (besan)
  • 2 cups sugar
  • 1 cup ghee
  • 1/2 cup water
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (optional)

Instructions

  1. In a heavy-bottomed pan, roast the gram flour over low heat until it turns aromatic and light golden in color.
  2. In another pan, combine sugar and water. Cook over medium heat to make a syrup of one-string consistency.
  3. Add the roasted gram flour to the syrup and mix well to avoid lumps.
  4. Gradually add ghee and cardamom powder while continuously stirring the mixture.
  5. Continue to cook the mixture until it thickens and leaves the sides of the pan.
  6. Pour the mixture onto a greased surface and spread it evenly using a greased rolling pin.
  7. Sprinkle chopped nuts on top and gently press them into the mixture.
  8. Allow it to cool for a few minutes, then cut into desired shapes using a sharp knife.
  9. Let it cool completely before removing the pieces.
