Soan Papdi
Soan papdi is a popular Indian sweet made during festivals and special occasions. It has a flaky and melt-in-your-mouth texture with a hint of cardamom flavor.
Ingredients
- 2 cups gram flour (besan)
- 2 cups sugar
- 1 cup ghee
- 1/2 cup water
- 1/2 teaspoon cardamom powder
- 2 tablespoons chopped nuts (optional)
Instructions
- In a heavy-bottomed pan, roast the gram flour over low heat until it turns aromatic and light golden in color.
- In another pan, combine sugar and water. Cook over medium heat to make a syrup of one-string consistency.
- Add the roasted gram flour to the syrup and mix well to avoid lumps.
- Gradually add ghee and cardamom powder while continuously stirring the mixture.
- Continue to cook the mixture until it thickens and leaves the sides of the pan.
- Pour the mixture onto a greased surface and spread it evenly using a greased rolling pin.
- Sprinkle chopped nuts on top and gently press them into the mixture.
- Allow it to cool for a few minutes, then cut into desired shapes using a sharp knife.
- Let it cool completely before removing the pieces.
