Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 1 cup cooked chickpeas
  • 1 potato, boiled and mashed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon curry powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped cilantro
  • Salt to taste
  • Oil for frying

Instructions

  1. In a large bowl, mix the flour, oil, and salt. Gradually add water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
  2. In a separate bowl, combine the chickpeas, mashed potato, onion, garlic, curry powder, cumin, turmeric, cayenne pepper, cilantro, and salt. Mix well to form the soca filling.
  3. Divide the dough into small balls and roll each ball into a thin circle. Cut each circle in half to form semi-circles.
  4. Take a semi-circle of dough and form a cone shape, sealing the edges with water. Fill the cone with the soca filling and seal the top edge with water to form a triangular samosa. Repeat with the remaining dough and filling.
  5. Heat oil in a pan over medium heat. Fry the samosas until golden brown and crispy. Drain on paper towels.
  6. Serve the soca samosas hot with your favorite chutney or dipping sauce.
