Socca: Chickpea Flour Pancake With Rosemary
Socca is a traditional chickpea flour pancake from Occitan cuisine, which is a region in southern France. This savory pancake is simple to make and incredibly versatile, making it a popular dish for any time of day.
Ingredients
- 1 cup chickpea flour
- 1 1/4 cups water
- 3 tablespoons olive oil, divided
- 1 teaspoon salt
- 1 tablespoon fresh rosemary, chopped
Instructions
- In a large mixing bowl, whisk together the chickpea flour, water, 2 tablespoons of olive oil, and salt until smooth. Let the batter rest for at least 30 minutes at room temperature.
- Preheat the oven broiler.
- Place a 10-inch cast-iron skillet or oven-safe non-stick skillet over medium-high heat. Add the remaining 1 tablespoon of olive oil to the skillet.
- Pour the batter into the hot skillet, tilting the skillet to evenly distribute the batter.
- Sprinkle the top of the batter with the chopped rosemary.
- Cook the socca for 3-5 minutes, until the edges are set and the bottom is golden brown.
- Transfer the skillet to the oven and broil for 2-3 minutes, until the top is golden brown and crispy.
- Slide the socca onto a cutting board, slice into wedges, and serve hot.
