Ingredients

  • 1 cup chickpea flour
  • 1 1/4 cups water
  • 3 tablespoons olive oil, divided

Instructions

  1. In a large mixing bowl, whisk together the chickpea flour, water, 2 tablespoons of olive oil, and salt until smooth. Let the batter rest for at least 30 minutes at room temperature.
  2. Preheat the oven broiler.
  3. Place a 10-inch cast-iron skillet or oven-safe non-stick skillet over medium-high heat. Add the remaining 1 tablespoon of olive oil to the skillet.
  4. Pour the batter into the hot skillet, tilting the skillet to evenly distribute the batter.
  5. Sprinkle the top of the batter with the chopped rosemary.
  6. Cook the socca for 3-5 minutes, until the edges are set and the bottom is golden brown.
  7. Transfer the skillet to the oven and broil for 2-3 minutes, until the top is golden brown and crispy.
  8. Slide the socca onto a cutting board, slice into wedges, and serve hot.
