Ingredients

Instructions

  1. In a mixing bowl, whisk together the chickpea flour, water, 1 tablespoon of olive oil, salt, and black pepper to make the socca batter.
  2. Let the batter rest for 10 minutes.
  3. In a non-stick skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
  4. Pour 1/4 of the batter into the skillet, swirling to spread it out into a thin layer.
  5. Cook for 3-4 minutes until the bottom is golden and crispy, then flip and cook for an additional 2-3 minutes. Repeat with the remaining batter to make 4 socca crusts.
  6. Top each socca crust with cherry tomatoes, black olives, capers, and fresh basil.
