Soft Mutton Kebabs (galawati Kebab)
Soft Mutton Kebabs, also known as Galawati Kebab, are a specialty of Awadhi cuisine, known for their melt-in-the-mouth texture and rich flavors. These kebabs are a must-try for anyone who loves indulging in tender, aromatic meat dishes.
Ingredients
- 500g mutton, finely minced
- 2 tbsp raw papaya paste
- 1/2 cup fried onions
- 2 tbsp ghee
- 1 tbsp ginger-garlic paste
- 1/2 cup hung curd
- 1 tsp garam masala
- 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp nutmeg powder
- 1/2 tsp mace powder
- 1/2 tsp rose water
- 1/2 tsp kebab chini (cubeb pepper) powder
- Salt to taste
- Oil for shallow frying
Instructions
- Mix the minced mutton with raw papaya paste and set aside for 2 hours to tenderize.
- In a large bowl, combine the marinated mutton, fried onions, ghee, ginger-garlic paste, hung curd, garam masala, red chili powder, turmeric powder, nutmeg powder, mace powder, rose water, kebab chini powder, and salt. Mix well to form a smooth mixture.
- Divide the mixture into equal portions and shape them into round kebabs.
- Heat oil in a pan and shallow fry the kebabs until they are golden brown on both sides.
- Serve the soft mutton kebabs hot with mint chutney and sliced onions.
