Soft Mutton Kebabs (galawati Kebab)

Ingredients

  • 500g mutton, finely minced
  • 2 tbsp raw papaya paste
  • 1/2 cup fried onions
  • 2 tbsp ghee
  • 1 tbsp ginger-garlic paste
  • 1/2 cup hung curd
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp nutmeg powder
  • 1/2 tsp mace powder
  • 1/2 tsp rose water
  • 1/2 tsp kebab chini (cubeb pepper) powder
  • Salt to taste
  • Oil for shallow frying

Instructions

  1. Mix the minced mutton with raw papaya paste and set aside for 2 hours to tenderize.
  2. In a large bowl, combine the marinated mutton, fried onions, ghee, ginger-garlic paste, hung curd, garam masala, red chili powder, turmeric powder, nutmeg powder, mace powder, rose water, kebab chini powder, and salt. Mix well to form a smooth mixture.
  3. Divide the mixture into equal portions and shape them into round kebabs.
  4. Heat oil in a pan and shallow fry the kebabs until they are golden brown on both sides.
  5. Serve the soft mutton kebabs hot with mint chutney and sliced onions.
