Soft Mutton Seekh Kebab Biryani (awadhi Galawati Seekh Kebab Biryani)
Soft Mutton Seekh Kebab Biryani, also known as Awadhi Galawati Seekh Kebab Biryani, is a delectable dish from the Awadhi cuisine that combines the flavors of succulent mutton seekh kebabs with aromatic biryani rice.
Ingredients
- 500g mutton, minced
- 2 tbsp ginger-garlic paste
- 1/2 cup raw papaya paste
- 1/4 cup fried onions
- 2 tsp garam masala
- 1 tsp red chili powder
- 1/2 cup chopped mint leaves
- 1/2 cup chopped coriander leaves
- 1/4 cup roasted gram flour
- 1/2 cup ghee
- 4 cups basmati rice, soaked
- Whole spices (cinnamon, cardamom, cloves)
- Saffron strands soaked in milk
- Fried onions for garnish
Instructions
- In a bowl, mix minced mutton, ginger-garlic paste, raw papaya paste, fried onions, garam masala, red chili powder, mint leaves, coriander leaves, and roasted gram flour. Refrigerate for 2 hours.
- Divide the mixture into equal portions and shape them onto skewers to make seekh kebabs. Cook the kebabs on a grill or in a pan until they are soft and cooked through.
- In a separate pot, heat ghee and add the whole spices. Add the soaked rice and sauté for a few minutes. Add water and cook the rice until it is 70% done.
- Layer the cooked rice and mutton seekh kebabs in a pot. Drizzle saffron milk and fried onions between the layers. Cover and cook on low heat until the rice is fully done.
- Serve the Soft Mutton Seekh Kebab Biryani hot, garnished with fried onions.
