Sole Meunière (Pan-Fried Sole)

Ingredients

  • 4 sole fillets
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Dredge the sole fillets in flour seasoned with salt and pepper.
  2. Heat 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Add the sole fillets to the skillet and cook until golden brown, about 2-3 minutes per side.
  4. Transfer the cooked fillets to a serving platter.
  5. Add the remaining 2 tablespoons of butter to the skillet and cook until it turns a light brown color.
  6. Remove the skillet from the heat and stir in the lemon juice.
  7. Pour the brown butter sauce over the cooked sole fillets and sprinkle with chopped parsley.
