Solva Seafood Paella

Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 cup Arborio rice
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads
- 3 cups seafood or chicken broth
- 1 pound mixed seafood (such as shrimp, mussels, and squid)
- 1/2 cup frozen peas
- Lemon wedges, for serving
Instructions
- In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and sliced red bell pepper to the pan. Cook for another 3-4 minutes until the pepper is slightly softened.
- Stir in the Arborio rice, smoked paprika, and saffron threads. Cook for 1-2 minutes, stirring constantly.
- Pour in the seafood or chicken broth and bring the mixture to a simmer. Cook for 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid is absorbed.
- Add the mixed seafood and frozen peas to the pan. Continue to cook for 5-7 minutes, or until the seafood is fully cooked and the rice is tender.
- Remove the paella from the heat and let it rest for a few minutes. Serve with lemon wedges on the side.
