Solva Seafood Paella

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 cup Arborio rice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 3 cups seafood or chicken broth
  • 1 pound mixed seafood (such as shrimp, mussels, and squid)
  • 1/2 cup frozen peas
  • Lemon wedges, for serving

Instructions

  1. In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and sliced red bell pepper to the pan. Cook for another 3-4 minutes until the pepper is slightly softened.
  3. Stir in the Arborio rice, smoked paprika, and saffron threads. Cook for 1-2 minutes, stirring constantly.
  4. Pour in the seafood or chicken broth and bring the mixture to a simmer. Cook for 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid is absorbed.
  5. Add the mixed seafood and frozen peas to the pan. Continue to cook for 5-7 minutes, or until the seafood is fully cooked and the rice is tender.
  6. Remove the paella from the heat and let it rest for a few minutes. Serve with lemon wedges on the side.
