Solyanka Surprise (Солянка)

Ingredients

  • 200g beef sausage, sliced
  • 200g ham, diced
  • 200g chicken breast, cubed
  • 1 onion, chopped
  • 3 pickles, sliced
  • 1 bell pepper, diced
  • 1 carrot, grated
  • 4 potatoes, cubed
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1/4 cup olives, sliced
  • 2 bay leaves
  • 1/2 tsp paprika
  • 1/4 cup sour cream (optional, for serving)

Instructions

  1. In a large pot, sauté the onion until translucent.
  2. Add the beef sausage, ham, and chicken breast. Cook until browned.
  3. Stir in the pickles, bell pepper, carrot, and potatoes. Cook for 5 minutes.
  4. Pour in the beef broth and add the tomato paste, olives, bay leaves, and paprika. Simmer for 45 minutes.
  5. Remove the bay leaves and serve hot, topped with a dollop of sour cream if desired.
