Солянка (Solyanka) is a traditional Belarusian soup known for its rich and tangy flavor. This hearty dish is a combination of different meats, pickles, and a variety of vegetables, making it a perfect comfort food for cold winter days.
Ingredients
- 200g beef sausage, sliced
- 200g ham, diced
- 200g chicken breast, cubed
- 1 onion, chopped
- 3 pickles, sliced
- 1 bell pepper, diced
- 1 carrot, grated
- 4 potatoes, cubed
- 4 cups beef broth
- 2 tbsp tomato paste
- 1/4 cup olives, sliced
- 2 bay leaves
- 1/2 tsp paprika
- 1/4 cup sour cream (optional, for serving)
Instructions
- In a large pot, sauté the onion until translucent.
- Add the beef sausage, ham, and chicken breast. Cook until browned.
- Stir in the pickles, bell pepper, carrot, and potatoes. Cook for 5 minutes.
- Pour in the beef broth and add the tomato paste, olives, bay leaves, and paprika. Simmer for 45 minutes.
- Remove the bay leaves and serve hot, topped with a dollop of sour cream if desired.
