Solyanka (ukrainian Mushroom And Potato Soup)
Solyanka is a traditional Ukrainian mushroom and potato soup that is hearty, flavorful, and perfect for a cold winter day.
Ingredients
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 lb mushrooms, sliced
- 2 large potatoes, diced
- 6 cups vegetable broth
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms and cook until they release their liquid and start to brown.
- Sprinkle the flour over the mushrooms and stir to combine.
- Add the vegetable broth and potatoes. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- In a small bowl, whisk the sour cream with a ladle of hot soup until smooth. Gradually stir the sour cream mixture into the soup.
- Season with salt and pepper to taste. Serve hot.
