Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 lb mushrooms, sliced
  • 2 large potatoes, diced
  • 6 cups vegetable broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the mushrooms and cook until they release their liquid and start to brown.
  3. Sprinkle the flour over the mushrooms and stir to combine.
  4. Add the vegetable broth and potatoes. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  5. In a small bowl, whisk the sour cream with a ladle of hot soup until smooth. Gradually stir the sour cream mixture into the soup.
