Somali Bariis iyo Digaag iyo Suugo iyo Xalwo (Rice with Chicken, Tomato Sauce, and Halva)
This Somali dish combines flavorful rice with tender chicken, rich tomato sauce, and sweet halva for a satisfying meal.
Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 onion, chopped
- 2 tomatoes, diced
- 1/2 cup tomato sauce
- 1/4 cup vegetable oil
- 1/2 cup halva, crumbled
- 1 tsp cumin
- 1 tsp turmeric
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and cook until translucent.
- Add the chicken pieces and cook until browned.
- Stir in the diced tomatoes, tomato sauce, cumin, turmeric, salt, and pepper.
- Simmer for 20 minutes, then remove the chicken from the pot and set aside.
- Add the basmati rice to the pot and stir to coat with the tomato mixture.
- Return the chicken pieces to the pot, nestling them into the rice.
- Add enough water to cover the rice and chicken, then cover the pot and simmer for 20 minutes, or until the rice is tender and the chicken is cooked through.
- Serve the rice and chicken topped with crumbled halva.
