Somali Digaag iyo Suugo iyo Baasto iyo Kashaato (Chicken with Tomato Sauce, Pasta, and Sesame Cookies)
This recipe combines the flavors of Somali cuisine with a comforting and satisfying meal. The tender chicken in tomato sauce pairs perfectly with the hearty pasta, and the meal is rounded out with a sweet and nutty sesame cookie for dessert.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 8 oz pasta of your choice
- 1 cup all-purpose flour
- 1/2 cup sesame seeds
- 1/2 cup butter, softened
- 1/2 cup sugar
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 6-7 minutes on each side, or until fully cooked. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining olive oil and sauté the chopped onion and minced garlic until softened.
- Pour in the crushed tomatoes, cumin, paprika, salt, and pepper. Stir to combine, then add the cooked chicken back into the skillet. Simmer for 10-15 minutes.
- While the chicken is simmering, cook the pasta according to the package instructions. Drain and set aside.
- In a mixing bowl, combine the flour, sesame seeds, butter, and sugar to form the cookie dough. Shape the dough into small balls and place them on a baking sheet. Flatten each ball with a fork and bake at 350°F for 12-15 minutes, or until golden brown.
- Serve the chicken with tomato sauce over the cooked pasta, and enjoy the sesame cookies for dessert.
