Ingredients

  • 2 cups shelled pistachios
  • 1 cup granulated sugar
  • 1/2 cup water
  • 2 tablespoons rosewater

Instructions

  1. In a food processor, pulse the pistachios until finely ground.
  2. In a saucepan, combine the sugar and water over medium heat, stirring until the sugar dissolves.
  3. Add the ground pistachios to the saucepan and continue to cook, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
  4. Remove the mixture from the heat and stir in the rosewater.
  5. Transfer the mixture to a greased pan and smooth the top with a spatula.
  6. Allow the fudge to cool and set at room temperature for about 2 hours.
  7. Cut the fudge into small squares and serve.
