Ingredients
- 2 cups shelled pistachios
- 1 cup granulated sugar
- 1/2 cup water
- 2 tablespoons rosewater
Instructions
- In a food processor, pulse the pistachios until finely ground.
- In a saucepan, combine the sugar and water over medium heat, stirring until the sugar dissolves.
- Add the ground pistachios to the saucepan and continue to cook, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
- Remove the mixture from the heat and stir in the rosewater.
- Transfer the mixture to a greased pan and smooth the top with a spatula.
- Allow the fudge to cool and set at room temperature for about 2 hours.
- Cut the fudge into small squares and serve.
