Soon Kueh is a traditional Teochew snack made with a translucent rice flour skin and filled with a savory mixture of jicama, dried shrimps, and mushrooms. Ingredients
- 2 cups rice flour
- 1 cup water
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil
- 1 jicama, grated
- 1/2 cup dried shrimps, soaked and chopped
- 3-4 dried shiitake mushrooms, soaked and diced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
Instructions
- In a large bowl, mix the rice flour, water, and salt to form a smooth dough. Knead in the vegetable oil and let it rest for 15 minutes.
- Meanwhile, prepare the filling by sautéing the jicama, dried shrimps, mushrooms, and garlic until fragrant. Season with soy sauce, sugar, and white pepper. Let the filling cool.
- Divide the dough into small balls and roll each ball into a thin circle. Place a spoonful of filling in the center and pleat the edges to seal the Soon Kueh.
- Steam the Soon Kueh for 8-10 minutes until the skin turns translucent.
- Serve hot with chili sauce or sweet black sauce.
