Instructions

  1. In a pot, heat vegetable oil over medium heat. Add onion, garlic, red chilies, lemongrass, and galangal. Sauté until fragrant.
  2. Add chicken pieces and cook until they are no longer pink.
  3. Pour in coconut milk and chicken broth. Stir in turmeric powder, coriander powder, salt, and kaffir lime leaves. Simmer for 30 minutes.
  4. Stir in lime juice and brown sugar. Adjust the seasoning if needed.
