Sop Babat Pedas is a traditional spicy beef tripe soup from Makassar cuisine. This flavorful and aromatic soup is perfect for warming up on a chilly day.

Sop Babat Pedas (spicy Beef Tripe Soup)

Ingredients

  • 500g beef tripe, cleaned and cut into small pieces
  • 2 liters water
  • 3 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 2 cm galangal, bruised
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1/2 tsp sugar
  • 2 tbsp cooking oil
  • 2 green onions, thinly sliced
  • 2 tbsp fried shallots, for garnish

Instructions

  1. In a large pot, boil the beef tripe in water for 30 minutes. Drain and set aside.
  2. Heat the cooking oil in the pot over medium heat. Sauté the shallots and garlic until fragrant.
  3. Add the boiled beef tripe, tomatoes, lemongrass, kaffir lime leaves, galangal, turmeric powder, salt, and sugar. Stir well.
  4. Pour in 2 liters of water and bring to a boil. Reduce heat and simmer for 1.5 hours, or until the beef tripe is tender.
  5. Adjust the seasoning if needed. Remove from heat and discard the lemongrass, kaffir lime leaves, and galangal.
  6. Serve the Sop Babat Pedas hot, garnished with sliced green onions and fried shallots.
