Sop Babat Pedas (spicy Beef Tripe Soup)
Sop Babat Pedas is a traditional spicy beef tripe soup from Makassar cuisine. This flavorful and aromatic soup is perfect for warming up on a chilly day.
Ingredients
- 500g beef tripe, cleaned and cut into small pieces
- 2 liters water
- 3 shallots, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 2 lemongrass stalks, bruised
- 3 kaffir lime leaves
- 2 cm galangal, bruised
- 1 tsp turmeric powder
- 1 tsp salt
- 1/2 tsp sugar
- 2 tbsp cooking oil
- 2 green onions, thinly sliced
- 2 tbsp fried shallots, for garnish
Instructions
- In a large pot, boil the beef tripe in water for 30 minutes. Drain and set aside.
- Heat the cooking oil in the pot over medium heat. Sauté the shallots and garlic until fragrant.
- Add the boiled beef tripe, tomatoes, lemongrass, kaffir lime leaves, galangal, turmeric powder, salt, and sugar. Stir well.
- Pour in 2 liters of water and bring to a boil. Reduce heat and simmer for 1.5 hours, or until the beef tripe is tender.
- Adjust the seasoning if needed. Remove from heat and discard the lemongrass, kaffir lime leaves, and galangal.
- Serve the Sop Babat Pedas hot, garnished with sliced green onions and fried shallots.
