Ingredients

  • 1 kg beef oxtail, cut into pieces
  • 2 liters water
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 4 shallots, sliced
  • 4 cloves garlic, minced
  • 3 red chilies, sliced
  • 2 bay leaves
  • 1 lemongrass stalk, bruised
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  2. Add the beef oxtail pieces to the pot and cook until browned on all sides.
  3. Pour in the water and add the bay leaves and lemongrass. Bring to a boil, then reduce the heat and simmer for 2 hours until the meat is tender.
  4. Add the tomatoes, carrots, and potatoes to the pot. Continue to simmer for another 30 minutes until the vegetables are cooked through.
  5. Season the soup with salt and pepper to taste. Serve hot.
