Ingredients
- 1 kg beef oxtail, cut into pieces
- 2 liters water
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 4 shallots, sliced
- 4 cloves garlic, minced
- 3 red chilies, sliced
- 2 bay leaves
- 1 lemongrass stalk, bruised
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the beef oxtail pieces to the pot and cook until browned on all sides.
- Pour in the water and add the bay leaves and lemongrass. Bring to a boil, then reduce the heat and simmer for 2 hours until the meat is tender.
- Add the tomatoes, carrots, and potatoes to the pot. Continue to simmer for another 30 minutes until the vegetables are cooked through.
- Season the soup with salt and pepper to taste. Serve hot.
