Sop Buntut Pedas (spicy Beef Soup)
Sop Buntut Pedas is a traditional Indonesian beef soup that is known for its rich and spicy flavors. This dish is popular in Sundanese cuisine and is often enjoyed with steamed rice or as a standalone meal.
Ingredients
- 2 lbs oxtail
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 tomatoes, diced
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 2-inch galangal, sliced
- 1-inch ginger, sliced
- 2 tbsp vegetable oil
- 1 tsp salt
- 1/2 tsp ground white pepper
- 1/2 tsp sugar
- 8 cups water
- 2 green onions, chopped
- 2 tbsp fried shallots, for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Add garlic and onion, sauté until fragrant.
- Add oxtail, lemongrass, kaffir lime leaves, galangal, and ginger. Cook until the oxtail is browned.
- Pour in water, bring to a boil, then reduce heat to low. Simmer for 2 hours or until the oxtail is tender.
- Add tomatoes, salt, white pepper, and sugar. Cook for another 10 minutes.
- Remove from heat and discard lemongrass, kaffir lime leaves, galangal, and ginger.
- Serve the soup hot, garnished with chopped green onions and fried shallots.
