Sop Konro Makassar (makassar-style Beef Soup)
Sop Konro Makassar is a traditional beef soup from the Makassar cuisine of Indonesia. This rich and flavorful soup is a popular dish known for its aromatic spices and tender beef.
Ingredients
- 2 lbs beef ribs
- 6 cups water
- 2 lemongrass stalks, bruised
- 3 kaffir lime leaves
- 3 tomatoes, quartered
- 1 onion, sliced
- 4 cloves garlic, minced
- 2-inch ginger, sliced
- 2 tsp salt
- 1 tsp sugar
- 1/2 tsp ground white pepper
- 2 tbsp cooking oil
- 4 green onions, chopped
- Fried shallots for garnish
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the onion, garlic, and ginger. Sauté until fragrant.
- Add the beef ribs and cook until browned on all sides.
- Pour in the water and add lemongrass, kaffir lime leaves, tomatoes, salt, sugar, and white pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours or until the beef is tender.
- Skim off any foam that rises to the surface during cooking.
- Once the beef is tender, remove the beef ribs from the pot and set aside.
- Strain the soup to remove the aromatics and return the soup to the pot.
- Bring the soup back to a simmer and adjust the seasoning if needed.
- Divide the beef ribs into serving bowls, ladle the hot soup over the beef, and garnish with chopped green onions and fried shallots.
