Sop Konro Makassar (makassar-style Beef Soup)

Ingredients

  • 2 lbs beef ribs
  • 6 cups water
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 3 tomatoes, quartered
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2-inch ginger, sliced
  • 2 tsp salt
  • 1 tsp sugar
  • 1/2 tsp ground white pepper
  • 2 tbsp cooking oil
  • 4 green onions, chopped
  • Fried shallots for garnish

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the onion, garlic, and ginger. Sauté until fragrant.
  2. Add the beef ribs and cook until browned on all sides.
  3. Pour in the water and add lemongrass, kaffir lime leaves, tomatoes, salt, sugar, and white pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours or until the beef is tender.
  4. Skim off any foam that rises to the surface during cooking.
  5. Once the beef is tender, remove the beef ribs from the pot and set aside.
  6. Strain the soup to remove the aromatics and return the soup to the pot.
  7. Bring the soup back to a simmer and adjust the seasoning if needed.
  8. Divide the beef ribs into serving bowls, ladle the hot soup over the beef, and garnish with chopped green onions and fried shallots.
