Ingredients

  • 4 medium-sized bitter melons
  • 200g ground chicken
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 4 cups chicken broth
  • 2 tomatoes, diced
  • 2 green onions, chopped
  • 2 tablespoons cooking oil

Instructions

  1. Prepare the bitter melons by cutting them in half lengthwise and removing the seeds and pith.
  2. In a bowl, mix the ground chicken, onion, garlic, salt, and pepper.
  3. Stuff the bitter melon halves with the chicken mixture.
  4. Heat the cooking oil in a pot and sauté the stuffed bitter melons until the chicken is cooked through.
  5. Pour in the chicken broth and bring to a boil. Simmer for 15 minutes.
  6. Add the diced tomatoes and green onions, and simmer for an additional 5 minutes.
