Ingredients

  • 500g shrimp, peeled and deveined
  • 2 tomatoes, diced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 tablespoons tamarind paste
  • 1 tablespoon fish sauce
  • Salt to taste
  • Sugar to taste
  • 2 tablespoons cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the onion, garlic, and red chilies. Sauté until fragrant.
  2. Add the shrimp and cook until they turn pink.
  3. Pour in the chicken broth and lemongrass. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Stir in the diced tomatoes, coconut milk, tamarind paste, and fish sauce. Simmer for another 5 minutes.
  5. Season with salt and sugar to taste.
  6. Remove the lemongrass stalk before serving.
