Sop Udang Pedas (spicy Shrimp Soup)

Ingredients
- 500g shrimp, peeled and deveined
- 2 tomatoes, diced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 stalk lemongrass, bruised
- 4 cups chicken broth
- 1 cup coconut milk
- 2 tablespoons tamarind paste
- 1 tablespoon fish sauce
- Salt to taste
- Sugar to taste
- 2 tablespoons cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the onion, garlic, and red chilies. Sauté until fragrant.
- Add the shrimp and cook until they turn pink.
- Pour in the chicken broth and lemongrass. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in the diced tomatoes, coconut milk, tamarind paste, and fish sauce. Simmer for another 5 minutes.
- Season with salt and sugar to taste.
- Remove the lemongrass stalk before serving.
