Ingredients

  • 500g pumpkin, peeled and diced
  • 1 cup red lentils
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Stir in the ground turmeric and cumin, and cook for another minute to release their flavors.
  4. Add the diced pumpkin, red lentils, and vegetable broth to the pot.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the pumpkin and lentils are tender.
  6. Use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth.
  7. Season the soup with salt and pepper to taste.
  8. Serve the Sopa Abobora e Lentilhas hot, garnished with a drizzle of olive oil and a sprinkle of ground black pepper.
