Sopa Abobora E Lentilhas (pumpkin And Lentil Soup)

Ingredients
- 500g pumpkin, peeled and diced
- 1 cup red lentils
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Stir in the ground turmeric and cumin, and cook for another minute to release their flavors.
- Add the diced pumpkin, red lentils, and vegetable broth to the pot.
- Bring the soup to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the pumpkin and lentils are tender.
- Use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth.
- Season the soup with salt and pepper to taste.
- Serve the Sopa Abobora e Lentilhas hot, garnished with a drizzle of olive oil and a sprinkle of ground black pepper.
