Ingredients
- 2 pounds fresh clams, scrubbed
- 3 tablespoons olive oil

- 1/2 teaspoon saffron threads
- 4 cups fish or vegetable broth

Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are soft, about 5 minutes.
- Add the tomatoes, paprika, and saffron. Cook for another 5 minutes, stirring occasionally.
- Pour in the broth and wine. Bring to a simmer.
- Add the clams to the pot. Cover and cook for about 10 minutes, or until the clams have opened. Discard any clams that do not open.
- Season the soup with salt and pepper to taste. Stir in the chopped parsley.
