  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are soft, about 5 minutes.
  2. Add the tomatoes, paprika, and saffron. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the broth and wine. Bring to a simmer.
  4. Add the clams to the pot. Cover and cook for about 10 minutes, or until the clams have opened. Discard any clams that do not open.
  5. Season the soup with salt and pepper to taste. Stir in the chopped parsley.
