Ingredients

- 4 cups fresh spinach, chopped

Instructions
- In a large pot, combine the peanut butter and vegetable broth. Stir over medium heat until well combined.
- Add the chopped onion, minced garlic, ground cumin, cayenne pepper, salt, and black pepper to the pot. Stir well and bring to a simmer.
- Add the chopped spinach to the pot and cook for 5-7 minutes, until the spinach is wilted.
- Stir in the coconut milk and simmer for an additional 5 minutes.
- Remove from heat and let the soup cool slightly before serving.
