Ingredients

  • 500g mixed wild mushrooms, cleaned and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 1 liter vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the mushrooms and cook until they release their liquid and start to brown.
  3. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  5. Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
  6. Serve hot, garnished with a drizzle of cream and a sprinkle of chopped fresh herbs if desired.
