Sopa De Bolets Andorrana (andorran Mushroom Soup)
Sopa de Bolets Andorrana, or Andorran Mushroom Soup, is a traditional dish from the small European country of Andorra. This hearty and flavorful soup is perfect for warming up on a chilly day.
Ingredients
- 500g mixed wild mushrooms, cleaned and sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 1 liter vegetable broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms and cook until they release their liquid and start to brown.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
- Serve hot, garnished with a drizzle of cream and a sprinkle of chopped fresh herbs if desired.
