Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green chili, sliced
- 1 tomato, chopped
- 4 cups fish or vegetable broth
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and green chili. Cook until the vegetables are softened, about 5 minutes.
- Add the chopped tomato, paprika, cayenne pepper, salt, and pepper. Stir to combine.
- Pour in the fish or vegetable broth and bring the soup to a simmer.
- Add the shrimp to the pot and cook for 3-4 minutes, or until they turn pink and opaque.
- Adjust the seasoning if needed and remove the pot from the heat.
- Serve the Sopa de Camarao Picante hot, garnished with fresh cilantro.
