Ingredients

  • 1 tomato, chopped
  • 4 cups fish or vegetable broth
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and green chili. Cook until the vegetables are softened, about 5 minutes.
  2. Add the chopped tomato, paprika, cayenne pepper, salt, and pepper. Stir to combine.
  3. Pour in the fish or vegetable broth and bring the soup to a simmer.
  4. Add the shrimp to the pot and cook for 3-4 minutes, or until they turn pink and opaque.
  5. Adjust the seasoning if needed and remove the pot from the heat.
  6. Serve the Sopa de Camarao Picante hot, garnished with fresh cilantro.
