Ingredients

  • 1 cup raw cashew nuts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced carrots and potatoes to the pot, and cook for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and add the raw cashew nuts, ground cumin, and paprika. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the vegetables are tender.
  5. Once the soup is ready, use an immersion blender to puree it until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  6. Adjust the seasoning if necessary, and serve the Sopa de Castanha de Caju hot, garnished with a few whole cashew nuts on top.
