Ingredients
- 1 cup raw cashew nuts
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced carrots and potatoes to the pot, and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and add the raw cashew nuts, ground cumin, and paprika. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the vegetables are tender.
- Once the soup is ready, use an immersion blender to puree it until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Adjust the seasoning if necessary, and serve the Sopa de Castanha de Caju hot, garnished with a few whole cashew nuts on top.
