Ingredients

  • 2 tomatoes, chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Rinse the pinto beans and place them in a large pot with 8 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beans are tender.
  2. In a separate pan, heat the vegetable oil over medium heat. Add the onion, garlic, red bell pepper, and carrot. Cook until the vegetables are softened.
  3. Add the chopped tomatoes, cumin, oregano, salt, and pepper to the pan. Cook for an additional 5 minutes.
  4. Add the cooked vegetables to the pot of beans and simmer for an additional 15 minutes to allow the flavors to meld.
  5. Adjust seasoning to taste and serve hot.
