Ingredients
- 2 cups dried pinto beans
- 8 cups water
- 1 onion, chopped

- 1 teaspoon oregano
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Rinse the pinto beans and place them in a large pot with 8 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beans are tender.
- In a separate pan, heat the vegetable oil over medium heat. Add the onion, garlic, red bell pepper, and carrot. Cook until the vegetables are softened.
- Add the chopped tomatoes, cumin, oregano, salt, and pepper to the pan. Cook for an additional 5 minutes.
- Add the cooked vegetables to the pot of beans and simmer for an additional 15 minutes to allow the flavors to meld.
- Adjust seasoning to taste and serve hot.
