Ingredients
- 4 green bananas, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the sliced green bananas to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat to low, add the cumin, oregano, salt, and pepper, and simmer for 20 minutes.
- Once the bananas are tender, remove the pot from the heat.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Return the soup to the pot and reheat if necessary.
- Adjust the seasoning if needed, and serve hot.
