Ingredients

  • 4 green bananas, peeled and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the sliced green bananas to the pot and cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the soup to a boil.
  5. Reduce the heat to low, add the cumin, oregano, salt, and pepper, and simmer for 20 minutes.
  6. Once the bananas are tender, remove the pot from the heat.
  7. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  8. Return the soup to the pot and reheat if necessary.
  9. Adjust the seasoning if needed, and serve hot.
