Ingredients

  • 500g boneless, skinless chicken breast, thinly sliced
  • 200g rice noodles
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red chili, thinly sliced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 4 cups chicken broth
  • 2 cups water
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and red chili. Cook until the onion is soft and translucent.
  2. Add the sliced chicken to the pot and cook until it is no longer pink.
  3. Stir in the ground turmeric, cumin, and coriander, and cook for another minute to toast the spices.
  4. Pour in the chicken broth and water. Bring the soup to a boil, then reduce the heat and let it simmer for 10 minutes.
  5. Add the rice noodles, fish sauce, and soy sauce to the pot. Cook for another 5-7 minutes, or until the noodles are tender.
  6. Stir in the lime juice and season the soup with salt and pepper to taste.
  7. Serve the soup hot, garnished with fresh cilantro.
