Ingredients
- 500g boneless, skinless chicken breast, thinly sliced
- 200g rice noodles
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red chili, thinly sliced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 4 cups chicken broth
- 2 cups water
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, garlic, and red chili. Cook until the onion is soft and translucent.
- Add the sliced chicken to the pot and cook until it is no longer pink.
- Stir in the ground turmeric, cumin, and coriander, and cook for another minute to toast the spices.
- Pour in the chicken broth and water. Bring the soup to a boil, then reduce the heat and let it simmer for 10 minutes.
- Add the rice noodles, fish sauce, and soy sauce to the pot. Cook for another 5-7 minutes, or until the noodles are tender.
- Stir in the lime juice and season the soup with salt and pepper to taste.
- Serve the soup hot, garnished with fresh cilantro.
