Sopa De Mariscos (seafood Soup Sensation)
Sopa de Mariscos, or Seafood Soup, is a popular dish in Nicaraguan cuisine. This flavorful and hearty soup is filled with a variety of seafood and is perfect for a comforting meal.
Ingredients
- 1 lb mixed seafood (shrimp, fish, squid, mussels)
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 4 cups fish or seafood broth
- 1 cup coconut milk
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp fresh cilantro, chopped
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the tomatoes and bell pepper, and cook for another 5 minutes.
- Pour in the fish or seafood broth and bring to a simmer.
- Add the mixed seafood, cumin, paprika, salt, and pepper. Simmer for 15-20 minutes.
- Stir in the coconut milk and fresh cilantro, and simmer for an additional 5 minutes.
- Adjust seasoning if needed, and serve hot.
