Sopa De Mariscos (seafood Soup Sensation)

Ingredients

  • 1 lb mixed seafood (shrimp, fish, squid, mussels)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 4 cups fish or seafood broth
  • 1 cup coconut milk
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the tomatoes and bell pepper, and cook for another 5 minutes.
  3. Pour in the fish or seafood broth and bring to a simmer.
  4. Add the mixed seafood, cumin, paprika, salt, and pepper. Simmer for 15-20 minutes.
  5. Stir in the coconut milk and fresh cilantro, and simmer for an additional 5 minutes.
  6. Adjust seasoning if needed, and serve hot.
