Sopa De Mondongo: Colombian Tripe Soup
Sopa de Mondongo is a traditional Colombian soup made with tripe, vegetables, and spices. It's a hearty and flavorful dish that is perfect for a comforting meal.
Ingredients
- 2 lbs beef tripe, cleaned and cut into small pieces
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 2 carrots, sliced
- 2 potatoes, peeled and diced
- 1 cup chopped cilantro
- 6 cups beef broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the beef tripe to the pot and cook for 10 minutes, stirring occasionally.
- Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for 1 hour.
- Add the red bell pepper, carrots, and potatoes to the pot. Cook for an additional 30 minutes or until the vegetables are tender.
- Stir in the cumin, oregano, and chopped cilantro. Season with salt and pepper to taste.
- Serve the Sopa de Mondongo hot, garnished with additional cilantro if desired.
