Sopa De Mondongo: Colombian Tripe Soup

Ingredients

  • 2 lbs beef tripe, cleaned and cut into small pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 carrots, sliced
  • 2 potatoes, peeled and diced
  • 1 cup chopped cilantro
  • 6 cups beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the beef tripe to the pot and cook for 10 minutes, stirring occasionally.
  3. Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for 1 hour.
  4. Add the red bell pepper, carrots, and potatoes to the pot. Cook for an additional 30 minutes or until the vegetables are tender.
  5. Stir in the cumin, oregano, and chopped cilantro. Season with salt and pepper to taste.
  6. Serve the Sopa de Mondongo hot, garnished with additional cilantro if desired.
