Ingredients
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 leek, sliced
- 200g of pancetta, diced
- 1 can of white beans, drained and rinsed
- 1 liter of chicken or vegetable broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, sauté the pancetta until crispy. Remove and set aside.
- Add the onion, carrots, potatoes, and leek to the pot and cook until softened.
- Pour in the broth, add the bay leaf, and bring to a simmer.
- Add the white beans and cooked pancetta, then let the soup simmer for 30-40 minutes.
- Season with salt and pepper to taste before serving.
