Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 leek, sliced
  • 200g of pancetta, diced
  • 1 can of white beans, drained and rinsed
  • 1 liter of chicken or vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the pancetta until crispy. Remove and set aside.
  2. Add the onion, carrots, potatoes, and leek to the pot and cook until softened.
  3. Pour in the broth, add the bay leaf, and bring to a simmer.
  4. Add the white beans and cooked pancetta, then let the soup simmer for 30-40 minutes.
  5. Season with salt and pepper to taste before serving.
