Ingredients

  • 1 whole chicken, cut into pieces
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 1 cup green peas
  • 1/2 cup rice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. In a large pot, combine the chicken pieces, onion, carrots, potatoes, bell pepper, tomatoes, green peas, rice, garlic, cumin, paprika, bay leaf, salt, and pepper.
  2. Pour the chicken broth over the ingredients in the pot.
  3. Bring the soup to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chicken is cooked through and the vegetables are tender.
  4. Remove the bay leaf and discard.
  5. Stir in the chopped cilantro and adjust the seasoning if needed.
