Ingredients

  • 2 lbs chicken pieces
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 1 potato, diced
  • 1 cup corn kernels
  • 1 cup green peas
  • 8 cups chicken broth
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp lime juice

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken and set aside.
  2. In the same pot, sauté the onion and garlic until fragrant. Add the carrots, celery, bell pepper, potato, corn, and peas. Cook for a few minutes.
  3. Pour in the chicken broth and add the browned chicken back to the pot. Season with oregano, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Stir in the fresh cilantro and lime juice. Adjust seasoning if needed.
