Ingredients
- 2 lbs chicken pieces
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 bell pepper, diced
- 1 potato, diced
- 1 cup corn kernels
- 1 cup green peas
- 8 cups chicken broth
- 1 tsp dried oregano
- 1 tsp ground cumin
- Salt and pepper to taste
- 2 tbsp fresh cilantro, chopped
- 2 tbsp lime juice
Instructions
- In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken and set aside.
- In the same pot, sauté the onion and garlic until fragrant. Add the carrots, celery, bell pepper, potato, corn, and peas. Cook for a few minutes.
- Pour in the chicken broth and add the browned chicken back to the pot. Season with oregano, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Stir in the fresh cilantro and lime juice. Adjust seasoning if needed.
- Serve the Sopa de Pollo Dominicana hot and enjoy!
