Ingredients
- 2 boneless, skinless chicken breasts
- 1 onion, chopped
- 2 garlic cloves, minced
- 6 cups chicken broth
- 2 large avocados, peeled and diced
- 1 tomato, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a large pot, bring the chicken broth to a boil.
- Add the chicken breasts, onion, and garlic to the pot. Reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks.
- Return the shredded chicken to the pot and add the diced avocado, tomato, and cilantro. Simmer for an additional 10 minutes.
- Stir in the lime juice and season with salt and pepper to taste.
- Serve the soup hot, garnished with additional cilantro if desired.
