Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 6 cups chicken broth
  • 2 large avocados, peeled and diced
  • 1 tomato, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken breasts, onion, and garlic to the pot. Reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.
  3. Remove the chicken from the pot and shred it using two forks.
  4. Return the shredded chicken to the pot and add the diced avocado, tomato, and cilantro. Simmer for an additional 10 minutes.
