Sopa de Res is a traditional Honduran beef soup that is hearty, flavorful, and perfect for a comforting meal. This soup is packed with tender beef, vegetables, and aromatic spices, making it a satisfying and delicious dish.
Ingredients
- 2 lbs beef stew meat, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 chayote squash, peeled and diced
- 1 corn on the cob, cut into rounds
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 1/2 cup green beans, cut into 1-inch pieces
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 8 cups beef broth
Instructions
- In a large pot, brown the beef stew meat over medium-high heat.
- Add the onion and garlic, and cook until fragrant.
- Stir in the carrots, potatoes, chayote squash, corn, bell pepper, tomatoes, green beans, cilantro, cumin, oregano, salt, and pepper.
- Pour in the beef broth and bring the soup to a boil.
- Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef and vegetables are tender.
- Adjust the seasoning if needed and serve hot.
