Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 chayote squash, peeled and diced
  • 1 corn on the cob, cut into rounds
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 1/2 cup green beans, cut into 1-inch pieces
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 cups beef broth

Instructions

  1. In a large pot, brown the beef stew meat over medium-high heat.
  2. Add the onion and garlic, and cook until fragrant.
  3. Stir in the carrots, potatoes, chayote squash, corn, bell pepper, tomatoes, green beans, cilantro, cumin, oregano, salt, and pepper.
  4. Pour in the beef broth and bring the soup to a boil.
  5. Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef and vegetables are tender.
  6. Adjust the seasoning if needed and serve hot.
