Ingredients
- 1 kg ripe tomatoes, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
- 4 cups vegetable broth
- 1/4 cup heavy cream (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the chopped tomatoes, sugar, salt, and pepper. Cook for 10 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the soup to a simmer. Cook for an additional 15-20 minutes.
- Using an immersion blender, purée the soup until smooth. If desired, stir in the heavy cream for a creamier texture.
- Adjust the seasoning if needed, and serve the soup hot.
