Sorak (goan Pork Curry)
Sorak is a traditional Goan Catholic pork curry that is known for its rich and flavorful taste. This dish is a staple in Goan cuisine and is often served with steamed rice or sannas (Goan rice cakes).
Ingredients
- 500g pork, cut into cubes
- 1 onion, finely chopped
- 2-3 green chilies, slit lengthwise
- 1-inch ginger, grated
- 4-5 garlic cloves, minced
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1 cup coconut milk
- Salt to taste
- 2 tbsp oil
- 2-3 sprigs of fresh coriander leaves, chopped (for garnish)
Instructions
- Heat oil in a pan and sauté the chopped onions until they turn golden brown.
- Add the green chilies, ginger, and garlic. Sauté for a few minutes until the raw smell disappears.
- Add the pork cubes and cook until they are browned on all sides.
- Stir in the turmeric, red chili powder, cumin powder, and coriander powder. Cook for a few minutes to toast the spices.
- Pour in the coconut milk and season with salt. Cover and simmer for 45-50 minutes, or until the pork is tender.
- Garnish with fresh coriander leaves before serving.
