Sorak is a traditional Goan Catholic pork curry that is known for its rich and flavorful taste. This dish is a staple in Goan cuisine and is often served with steamed rice or sannas (Goan rice cakes).

Sorak (goan Pork Curry)

Ingredients

  • 500g pork, cut into cubes
  • 1 onion, finely chopped
  • 2-3 green chilies, slit lengthwise
  • 1-inch ginger, grated
  • 4-5 garlic cloves, minced
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1 cup coconut milk
  • Salt to taste
  • 2 tbsp oil
  • 2-3 sprigs of fresh coriander leaves, chopped (for garnish)

Instructions

  1. Heat oil in a pan and sauté the chopped onions until they turn golden brown.
  2. Add the green chilies, ginger, and garlic. Sauté for a few minutes until the raw smell disappears.
  3. Add the pork cubes and cook until they are browned on all sides.
  4. Stir in the turmeric, red chili powder, cumin powder, and coriander powder. Cook for a few minutes to toast the spices.
  5. Pour in the coconut milk and season with salt. Cover and simmer for 45-50 minutes, or until the pork is tender.
  6. Garnish with fresh coriander leaves before serving.
