Ingredients
- 4 ripe Mundri mangoes, peeled and diced
- 1/2 cup sugar
- 1/4 cup water
- 2 tablespoons fresh lime juice
Instructions
- In a small saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and let the syrup cool.
- In a blender, puree the diced mangoes until smooth.
- Strain the mango puree through a fine-mesh sieve into a bowl to remove any fibers.
- Stir in the cooled sugar syrup and fresh lime juice into the mango puree.
- Pour the mixture into a shallow dish and place it in the freezer.
- Every 30 minutes, remove the dish from the freezer and scrape the mixture with a fork to break up any ice crystals. Repeat this process for about 3-4 hours, or until the sorbet is firm and scoopable.
