Sorbet Tum, also known as Algerian Mint Tea Sorbet, is a refreshing and delightful dessert that captures the essence of traditional Algerian mint tea in frozen form. This recipe is perfect for cooling down on a hot day or as a palate cleanser between courses.
Ingredients
- 4 cups water
- 1 cup sugar
- 1 bunch fresh mint leaves
- 3-4 green tea bags
- 1/4 cup fresh lemon juice
Instructions
- In a saucepan, combine the water and sugar. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved.
- Add the mint leaves to the saucepan and bring the mixture to a boil. Once boiling, remove from heat and add the green tea bags. Let the mixture steep for 5-7 minutes.
- Remove the tea bags and mint leaves from the mixture, then stir in the fresh lemon juice. Allow the mixture to cool to room temperature.
- Pour the cooled mixture into a shallow, freezer-safe container and place it in the freezer. Every 30 minutes, use a fork to scrape and stir the mixture to create a granita-like texture. Repeat this process for about 3-4 hours, or until the sorbet is fully frozen and has a light, fluffy texture.
- Serve the sorbet tum in chilled glasses or bowls, garnished with a sprig of fresh mint.
