Sorbet Tum (algerian Mint Tea Sorbet)

Ingredients

  • 4 cups water
  • 1 cup sugar
  • 1 bunch fresh mint leaves
  • 3-4 green tea bags
  • 1/4 cup fresh lemon juice

Instructions

  1. In a saucepan, combine the water and sugar. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved.
  2. Add the mint leaves to the saucepan and bring the mixture to a boil. Once boiling, remove from heat and add the green tea bags. Let the mixture steep for 5-7 minutes.
  3. Remove the tea bags and mint leaves from the mixture, then stir in the fresh lemon juice. Allow the mixture to cool to room temperature.
  4. Pour the cooled mixture into a shallow, freezer-safe container and place it in the freezer. Every 30 minutes, use a fork to scrape and stir the mixture to create a granita-like texture. Repeat this process for about 3-4 hours, or until the sorbet is fully frozen and has a light, fluffy texture.
  5. Serve the sorbet tum in chilled glasses or bowls, garnished with a sprig of fresh mint.
