Sorbeti Ya Embe (swahili Mango Sorbet)

Ingredients

  • 4 ripe mangoes, peeled and diced
  • 1/2 cup sugar
  • 1/4 cup water
  • 2 tablespoons fresh lime juice

Instructions

  1. In a small saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and let it cool.
  2. Place the diced mangoes in a blender or food processor. Add the cooled sugar syrup and fresh lime juice. Blend until smooth.
  3. Pour the mango mixture into a shallow dish and place it in the freezer.
  4. Every 30 minutes, remove the dish from the freezer and use a fork to scrape and stir the mixture, breaking up any ice crystals. Repeat this process until the sorbet is firm and scoopable, about 2-3 hours.
  5. Once the sorbet is ready, scoop it into serving dishes and enjoy!
