Sorpresa De Sancocho (sancocho Surprise)

Ingredients

  • 3 lbs chicken, cut into pieces
  • 1 lb yuca (cassava), peeled and cut into chunks
  • 1 lb ñame (yam), peeled and cut into chunks
  • 2 ears of corn, cut into thirds
  • 2 green plantains, peeled and cut into chunks
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 bunch of cilantro, chopped
  • 1 tsp oregano
  • 1 tsp cumin
  • 8 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium-high heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set it aside.
  2. Add the onions, garlic, and bell pepper to the pot. Sauté until the vegetables are soft and fragrant.
  3. Return the chicken to the pot and add the chicken broth, oregano, and cumin. Bring to a boil, then reduce the heat and let it simmer for 1 hour.
  4. Add the yuca, ñame, corn, and plantains to the pot. Simmer for an additional 30 minutes, or until the root vegetables are tender.
  5. Stir in the chopped cilantro and season with salt and pepper to taste.
  6. Serve the Sancocho hot, garnished with additional cilantro if desired.
