Sorpresa De Sancocho (sancocho Surprise)
Sorpresa de Sancocho, or Sancocho Surprise, is a traditional Puerto Rican stew that is hearty, flavorful, and perfect for bringing family and friends together. This dish is a celebration of Puerto Rican cuisine and is sure to impress with its rich flavors and comforting warmth.
Ingredients
- 3 lbs chicken, cut into pieces
- 1 lb yuca (cassava), peeled and cut into chunks
- 1 lb ñame (yam), peeled and cut into chunks
- 2 ears of corn, cut into thirds
- 2 green plantains, peeled and cut into chunks
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 1 bunch of cilantro, chopped
- 1 tsp oregano
- 1 tsp cumin
- 8 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium-high heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set it aside.
- Add the onions, garlic, and bell pepper to the pot. Sauté until the vegetables are soft and fragrant.
- Return the chicken to the pot and add the chicken broth, oregano, and cumin. Bring to a boil, then reduce the heat and let it simmer for 1 hour.
- Add the yuca, ñame, corn, and plantains to the pot. Simmer for an additional 30 minutes, or until the root vegetables are tender.
- Stir in the chopped cilantro and season with salt and pepper to taste.
- Serve the Sancocho hot, garnished with additional cilantro if desired.
