Soto Ayam Pedas (spicy Chicken Soup)

Ingredients

  • 2 lbs chicken, cut into pieces
  • 8 cups water
  • 4 lemongrass stalks, bruised
  • 5 kaffir lime leaves
  • 4 cloves garlic, minced
  • 1 inch galangal, sliced
  • 2 tomatoes, quartered
  • 200g bean sprouts
  • 4 hard-boiled eggs, halved
  • 200g rice vermicelli, cooked according to package instructions
  • Salt to taste
  • Sugar to taste
  • Lime wedges for serving

Instructions

  1. In a large pot, bring the water to a boil. Add the chicken pieces and cook for 20 minutes.
  2. Remove the chicken from the pot and set aside to cool. Skim off any impurities from the surface of the broth.
  3. Shred the cooked chicken and set aside.
  4. Return the broth to a simmer and add lemongrass, kaffir lime leaves, garlic, and galangal. Simmer for 30 minutes.
  5. Add the tomatoes and bean sprouts to the broth and cook for an additional 5 minutes.
  6. Season the broth with salt and sugar to taste.
  7. Divide the cooked rice vermicelli among serving bowls. Top with shredded chicken and a halved hard-boiled egg.
  8. Ladle the hot broth over the noodles, chicken, and egg. Garnish with lime wedges.
