Soto Ayam Pedas (spicy Chicken Soup)
Soto Ayam Pedas is a traditional Indonesian spicy chicken soup that is bursting with flavors. This comforting and aromatic soup is perfect for warming up on a chilly day or for a satisfying meal any time of the year.
Ingredients
- 2 lbs chicken, cut into pieces
- 8 cups water
- 4 lemongrass stalks, bruised
- 5 kaffir lime leaves
- 4 cloves garlic, minced
- 1 inch galangal, sliced
- 2 tomatoes, quartered
- 200g bean sprouts
- 4 hard-boiled eggs, halved
- 200g rice vermicelli, cooked according to package instructions
- Salt to taste
- Sugar to taste
- Lime wedges for serving
Instructions
- In a large pot, bring the water to a boil. Add the chicken pieces and cook for 20 minutes.
- Remove the chicken from the pot and set aside to cool. Skim off any impurities from the surface of the broth.
- Shred the cooked chicken and set aside.
- Return the broth to a simmer and add lemongrass, kaffir lime leaves, garlic, and galangal. Simmer for 30 minutes.
- Add the tomatoes and bean sprouts to the broth and cook for an additional 5 minutes.
- Season the broth with salt and sugar to taste.
- Divide the cooked rice vermicelli among serving bowls. Top with shredded chicken and a halved hard-boiled egg.
- Ladle the hot broth over the noodles, chicken, and egg. Garnish with lime wedges.
