Ingredients
- 2 stalks lemongrass, smashed
- 4 shallots, thinly sliced
- 3 cloves garlic, minced
- 1-inch piece ginger, sliced
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp white pepper
- 1 tsp salt
- 1 tbsp vegetable oil
- 6 cups chicken broth
- 2 cups shredded cooked chicken
- 8 oz vermicelli noodles, cooked according to package instructions
- 4 hard-boiled eggs, halved
- 1 cup bean sprouts
- 4 lime wedges
- Fried shallots for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lemongrass, shallots, garlic, and ginger. Cook until fragrant, about 3 minutes.
- Add the turmeric, coriander, cumin, white pepper, and salt. Stir well to combine.
- Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 30 minutes.
- Add the shredded chicken and let it simmer for another 10 minutes.
- To serve, divide the cooked vermicelli noodles into serving bowls. Ladle the hot soup over the noodles. Top with a halved hard-boiled egg, bean sprouts, and a lime wedge. Garnish with fried shallots.
