Soto Daging Lontong (braised Beef Soup With Lontong)

Ingredients
- 500g beef, cut into cubes
- 2 stalks lemongrass, bruised
- 5 kaffir lime leaves
- 3 cloves garlic, minced
- 2 shallots, sliced
- 1-inch galangal, bruised
- 2 tomatoes, quartered
- 2 L water
- Salt, to taste
- Sugar, to taste
- Oil for sautéing
- 4 pieces lontong (compressed rice cakes)
- 2 hard-boiled eggs, halved
- Fried shallots, for garnish
- Lime wedges, for serving
Instructions
- In a pot, heat some oil and sauté the garlic and shallots until fragrant.
- Add the beef cubes and cook until browned.
- Pour in the water and add lemongrass, kaffir lime leaves, galangal, and tomatoes. Bring to a boil, then reduce heat and simmer for 1.5 hours until the beef is tender.
- Season with salt and sugar to taste.
- To serve, place a piece of lontong in a bowl, top with the braised beef, and ladle the hot soup over it.
- Garnish with hard-boiled eggs and fried shallots. Serve with lime wedges on the side.
