Ingredients

  • 500g beef, cut into cubes
  • 2 stalks lemongrass, bruised
  • 5 kaffir lime leaves
  • 3 cloves garlic, minced
  • 2 shallots, sliced
  • 1-inch galangal, bruised
  • 2 tomatoes, quartered
  • 2 L water
  • Salt, to taste
  • Sugar, to taste
  • Oil for sautéing
  • 4 pieces lontong (compressed rice cakes)
  • 2 hard-boiled eggs, halved
  • Fried shallots, for garnish
  • Lime wedges, for serving

Instructions

  1. In a pot, heat some oil and sauté the garlic and shallots until fragrant.
  2. Add the beef cubes and cook until browned.
  3. Pour in the water and add lemongrass, kaffir lime leaves, galangal, and tomatoes. Bring to a boil, then reduce heat and simmer for 1.5 hours until the beef is tender.
  4. Season with salt and sugar to taste.
  5. To serve, place a piece of lontong in a bowl, top with the braised beef, and ladle the hot soup over it.
  6. Garnish with hard-boiled eggs and fried shallots. Serve with lime wedges on the side.
