Ingredients
- 500g beef, thinly sliced
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 3 tomatoes, quartered
- 4 shallots, thinly sliced
- 5 cloves garlic, minced
- 2 red chilies, sliced
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp galangal powder
- 1/2 tsp salt
- 1/2 tsp sugar
- 2 L water
- 2 tbsp oil for cooking
Instructions
- In a large pot, heat the oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the beef slices and cook until they change color.
- Add the turmeric, coriander, cumin, and galangal powder. Stir well to coat the beef.
- Pour in the water and add the lemongrass, kaffir lime leaves, and tomatoes. Season with salt and sugar. Bring to a boil, then reduce the heat and simmer for 45 minutes.
- Remove the lemongrass and kaffir lime leaves. Taste and adjust the seasoning if needed.
- Serve the Soto Daging Pedas Madura hot with steamed rice or rice cakes.
