Ingredients

  • 500g beef, thinly sliced
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 3 tomatoes, quartered
  • 4 shallots, thinly sliced
  • 5 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp galangal powder
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 2 L water
  • 2 tbsp oil for cooking

Instructions

  1. In a large pot, heat the oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  2. Add the beef slices and cook until they change color.
  3. Add the turmeric, coriander, cumin, and galangal powder. Stir well to coat the beef.
  4. Pour in the water and add the lemongrass, kaffir lime leaves, and tomatoes. Season with salt and sugar. Bring to a boil, then reduce the heat and simmer for 45 minutes.
  5. Remove the lemongrass and kaffir lime leaves. Taste and adjust the seasoning if needed.
  6. Serve the Soto Daging Pedas Madura hot with steamed rice or rice cakes.
