Ingredients

  • 500g beef, thinly sliced
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 5 cups beef broth
  • 3 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 inch galangal, sliced
  • 1 inch ginger, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • Salt to taste
  • Sugar to taste
  • 2 tbsp oil for cooking

Instructions

  1. In a pot, heat the oil over medium heat. Add the shallots, garlic, red chilies, galangal, and ginger. Sauté until fragrant.
  2. Add the beef and cook until it changes color.
  3. Pour in the beef broth and add the lemongrass, kaffir lime leaves, turmeric powder, coriander powder, cumin powder, salt, and sugar. Bring to a boil, then reduce heat and simmer for 1.5 hours or until the beef is tender.
  4. Adjust the seasoning with salt and sugar if needed.
  5. Serve the Soto Daging Pedas hot with steamed rice or rice cakes.
