Soto Daging Pedas (spicy Beef Soup)
Soto Daging Pedas is a traditional spicy beef soup from Banjar Cuisine, a flavorful and comforting dish that is perfect for warming up on a chilly day.
Ingredients
- 500g beef, thinly sliced
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 5 cups beef broth
- 3 shallots, thinly sliced
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- Salt to taste
- Sugar to taste
- 2 tbsp oil for cooking
Instructions
- In a pot, heat the oil over medium heat. Add the shallots, garlic, red chilies, galangal, and ginger. Sauté until fragrant.
- Add the beef and cook until it changes color.
- Pour in the beef broth and add the lemongrass, kaffir lime leaves, turmeric powder, coriander powder, cumin powder, salt, and sugar. Bring to a boil, then reduce heat and simmer for 1.5 hours or until the beef is tender.
- Adjust the seasoning with salt and sugar if needed.
- Serve the Soto Daging Pedas hot with steamed rice or rice cakes.
